Foodville-Roasting Day with Dave and Mitch Silagy-10/16/25

Barrels of love go into each bottle of Silagy Hot Sauce. What started out as a fun way to spice up meals for the family, has become quite a staple for many tables here in Vancouver.. Dave and Mitchell welcomed me to one of their roasting sessions at Big Bite Kitchens to chat about their humble beginnings, how they come up with recipes and the importance of community connections and cooperation. 
The roaster was already fired up containing a batch of tomatillos when I arrived on a crisp summer morning. The scent filled the air with a tangy aroma. 
While I have not yet found a way to duplicate the fabulous smells of the carmelizing garlic or tomatillo over the radio waves, this episode is rich with the sounds of industrial sized roasters and blenders while Dave and Michell share the story of their journey and their passion for fresh, local and of course tasty hot sauce.
